Garlic Sausage Pizza Sandwich

1 baguette, about 15 inches long
1/2 cup seasoned tomato sauce
1 cup (8 oz) shredded provolone cheese
12 oz Saag’s® Classics Garlic Sausage, halved lengthwise and sliced into half moons, browned
4 ripe plum tomatoes, sliced
Salt and freshly ground black pepper
1 Tbsp olive oil
1/4 cup pitted Nicoise olives, chopped
1/4 cup grated Parmesan or Romano cheese
1/4 cup chopped Italian parsley
recipe Preheat oven to 350˚F. Cut baguette in half lengthwise and scoop out most of the bread. Spread tomato sauce evenly on both halves. Sprinkle cheese evenly over sauce; top with sausage. Arrange tomato over sausage; sprinkle with salt and pepper and drizzle with olive oil. Sprinkle with grated cheese, parsley and olives. Loosely wrap the pizzas separately in foil. Bake on a cookie sheet 10 minutes. Open the foil and bake until the tomatoes are cooked and the cheese is melted, about 15 minutes. Cut into 2-1/2 inch sections.

Makes 4 to 6 servings.
