Sausage “Muffaletta”

1/2 cup prepared black or green olive tapenade
1 each roasted red and yellow bell pepper, finely chopped
1 Tbsp minced garlic
3 12-oz packages Saag’s® Naturals Turkey Italian Sausage
24 slices provolone cheese
12 French rolls
Preheat one side of grill to medium. Combine tapenade, peppers and garlic; set aside. Slice sausages in half lengthwise. Grill over direct heat until browned on both sides, turning every few minutes. Toast rolls over indirect heat. Place two sausage halves on each roll and top with tapenade mixture and two slices of provolone. Place the sandwich on the grill, on the side away from coals. Cover and allow to bake until cheese melts, 1 to 2 minutes.

Makes 12 servings.
