Butter Lettuce Salad with Garlic Sausage & Swiss Cheese

2 small tomatoes, peeled, seeded, and chopped
4 shallots, finely chopped
2 Tbsp white wine vinegar
1/3 cup olive oil
Salt
12 oz Saag’s® Classics Garlic Sausage, cut into matchstick-size strips
8 oz Swiss cheese, cut into matchstick-size strips
1 large head of butter lettuce, rinsed and dried
Freshly ground black pepper
1 small bunch chives, cut into 1/4-inch lengths for garnish
recipe Combine tomato, shallot, vinegar, oil and salt in a small bowl; stir to blend. Allow flavors to marry for about an hour.

In a separate bowls, toss sausage and cheese each with about one third of the dressing. Divide butter lettuce among 6 plates. Divide and scatter sausage and cheese on top of greens. Season with freshly ground black pepper. Garnish with chives.

Makes 6 servings.
