Combine tomato, shallot, vinegar, oil and salt in a small bowl; stir to blend. Allow flavors to marry for about an hour. In a separate bowls, toss sausage and cheese each with about one third of the dressing. Divide butter lettuce among 6 plates. Divide and scatter sausage and cheese on top of greens. Season with freshly ground black pepper. Garnish with chives.
