Confetti Sausage Nachos

12 oz Saag’s® Classics Louisiana Hot Sausage, sliced into coins 1/2" thick
1 bag of your favorite tortilla chips
1 cup cooked black beans
1/2 cup chopped yellow bell pepper
1/2 cup chopped red onion
1/2 cup chopped green bell pepper
1 cup chopped tomatoes
2 cups (8 oz) shredded Monterey Jack cheese
optional garnishes: olives, sour cream, guacamole
recipe Preheat oven to 350˚F. Cook sausage in saute pan until brown. Remove from skillet, let cool, and then slice into coins 1/2" thick. Wrap a baking sheet with foil and coat with cooking spray. Spread chips on tray. Drop spoonfuls of black beans over chips. Top with sliced, browned sausage. Sprinkle cheese and vegetables over all and bake until cheese melts, 10 to 12 minutes.

Makes 2 to 4 Servings.
