Bologna with Scalloped Spinach

2 Saag’s® German Bologna Rings, 1 lb each
12 oz frozen chopped spinach
2 Tbsp chopped onion
2 eggs, beaten
1/2 cup milk
1/4 cup shredded Cheddar cheese
Salt and freshly ground black pepper, to taste
1/4 cup buttered bread crumbs
Cook spinach according to package directions; drain. Combine with other ingredients, except sausage and bread crumbs. Season to taste. Pour into greased 1 qt baking dish. Spread crumbs over top and bake in 350°F oven until bubbly and hot, about 20 minutes.

Meanwhile, cover sausage rings with cold water in a pan. Bring to boil. Immediately remove from heat. Let stand 10 minutes. Drain.

Makes 4 servings.

Serve with boiled and buttered new potatoes.
