10 oz Saag’s® Frankfurters 5 or 6 medium zucchini 1 cup (4 oz) shredded Monterey Jack cheese 4 eggs, slightly beaten 1 Tbsp flour Salt and freshly ground black pepper Butter |
Preheat oven to 350˚F. Wash zucchini, cut off ends, do not peel. Grate on medium grater. In one bowl combine zucchini, cheese, eggs, flour, seasonings to taste. Mix well. Pour into a buttered 2 quart baking dish. Dot with butter. Bake 45 minutes. Meanwhile, place franks in cold water, heat to boiling. Remove pan from heat. Let stand 10 minutes. Drain. Serve piping hot with zucchini.
Makes 4 to 6 servings.
