Bockwurst with Gourmet Green Beans

12 oz Saag’s® Classics Bockwurst
10 oz frozen French style green beans
1/2 cup diced onion
1 Tbsp chopped parsley
2 Tbsp butter
2 Tbsp flour
1/2 tsp salt
1/4 tsp pepper
1/4 tsp gated lemon peel
1 cup dairy sour cream
First, cook beans according to package directions, but stop short of full cooking time so beans are just tender. In top of double boiler combine onion, parsley, butter. Saute gently until onion is tender, not brown. Gradually stir in flour, salt, pepper, lemon peel; stir in sour cream. Blend well. Fold in beans to evenly coat with sauce. Heat thoroughly.

Makes 6 to 8 servings.

Meanwhile, cover sausage with cold water in a pan, bring to boil. Immediately remove from heat. Let stand 10 minutes. Drain. Fry in butter over medium heat until lightly browned. Avoid splitting casing! Serve piping hot with Gourmet Beans.

Warmed pineapple slices add further interest.
